History Of American Breakfast

The popular dishes on American breakfast tables have evolved and can be traced back to the Native Americans.

According to aboriginal traditions and hearsay, they were the first to make maple syrup from maple tree sap long before the Europeans came. They also made different types of bread such as Johnnycakes, Ashcakes and Hoecakes using cornmeal.

The Victorian breakfast was greatly enjoyed by the middle class of Americans. They were responsible for tweaking and expanding the American breakfast table including cereal, eggs, meats, pieces of bread and fruits. It reflects how brunch is served today with breakfast items as poached eggs, toast, and English muffins with coffee to finish.

After the civil war, it was more of a common sight for Americans to eat sandwiches with ham and eggs for breakfast and even after. It was not until the 1800s that popcorn cereal began a staple breakfast with milk and a sweetener for taste. It was during the 1920s that cereals were sold to the masses.

This was inspired after the Jacksonian-era Clean Living movement claiming that eating bacon, eggs, pancakes, and hot coffee for breakfast was too indulgent. Dr. John Harvey Kellogg created the first breakfast cereal in 1878, and named it granola.  It was made with baked wheat, oatmeal, and cornmeal.
