“Teppan” is a Japanese word translated as metal plate and “Yaki” which means grilled or pan-fried. Teppanyaki is a post-war food cooked by the Japanese, many years ago. It is a Japanese food that is prepared with an iron griddle that has a long history in the country. The feature of this article is the Black Pepper Beef Teppanyaki 

Teppanyaki’s main cookery is the grill, which is called Teppan. The grills are heated up with propane, and feature a flat, and hard griddle-type cooking surface, and are generally cooked in front of seating guests.

The grills are perfect for cooking small-portioned or semi-solid food ingredients such as eggs, rice, and vegetables. In Japan, Teppanyaki means cooking a dish using the heated metal plate, which includes shrimps, okonomiyaki, steaks and more.

Teppanyaki is one of the popular food items in Japanese cuisine, which has gained global popularity.

Where Did Teppanyaki Come From?

First discovered and introduced by a Japanese restaurant named Misono in 1945, this dish has since become a hit in Japan. This dish is popularly believed to be created by a Japanese chef, Shigeji Fujioka. However, as time goes by, it was realised that Teppanyaki is more favourable among international tourists.

Hence, in 1964, the first-ever Teppanyaki steakhouse was brought into the United States. From there, it has spread across the globe to Europe, Korea, China, and Southeast Asia.

The Introduction Of Black Pepper Beef Teppanyaki

There are two types of Teppanyaki: Western style and Japanese style. The Western-style Teppanyaki is often cooked with regular ingredients like beef, steak, shrimps, vegetables, scallops and sometimes even lobster.

Whereas, Japanese-style Teppanyaki is cooked with noodles or soba, and mixed with meat slices. They also usually stir fry it with vegetable oil or animal fats for extra flavouring.

Black Pepper Beef Teppanyaki is a mixture of both Japanese and Western-style Teppanyaki, with beef slices added in together with assorted vegetables, rice or noodle and eggs. It is a fusion dish with a distinct black pepper flavour as it is the primary seasoning of the meal. Although the recipe is similar to Chinese’s Sliced Beef Stir-Fry with black pepper sauce, this dish features a smoky black pepper taste with a hint of fried onions.

With the same concept as the generic Teppanyaki, Black Pepper Beef Teppanyaki is stir-fried in front of customers on the grill using vegetable oil. The dish is commonly served with a bowl of white rice. The complete dish includes stir-fried vegetables such as onions, green onions, mushrooms, carrots, and sometimes bell pepper with rice and beef slices.

Before marinating with black pepper sauce, the beef is cut into thin slices. The marinated beef is then cooked on the grill. For added flavouring, the vegetables are also stir-fried with the remaining beef sauce. Some varieties may include plain vegetables and seafood such as scallops, squids and mussels.

As common as this dish is, it is still pretty tricky to find the best one in Malaysia. Many are often served too salty or too burnt. Some may have too much black pepper in the marinade.
