History of Bordelaise Bo Sot Vang

Bo sot vang or beef stew in red wine sauce actually originated from France. This beef stew is a traditional French dish where it is called bœuf à la Bourguignonne in French and is translated as beef bourguignon or Beef Burgundy in English. It is called beef burgundy because of the red wine used in making this recipe; burgundy.

The term bourguignon in this recipe was originally applied to all dishes that were prepared with red wine with mushroom and onion garnish in the 19th century. This traditional dish was first recorded in 19th century, but the original meat used in this dish was lamb and rabbit. Due to the French’s love of flavoured meat, they started to cook all sorts of meat in red wine which led to the invention of beef bourguignon or beef stew in red wine.

Meanwhile in Vietnam, French traders have started coming to Vietnam for various reasons in the 18th century. In the 19th century, the French kept flooding in and engaged massively with the Vietnamese to protect the presence of Catholic missionaries in Vietnam.

Due to their frequent visits, the French also left behind a part of their culture; beef stew in red wine or is now renowned with the name bo sot vang in Vietnam. With the strong flavour of the beef stew, the dish is well-loved by the Vietnamese and slowly making its way into every Vietnamese restaurant and to become one of their signature dishes.

How to Make Bordelaise Bo Sot Vang

To make Bo Sot Vang, you need to prepare the ingredients first. The ingredients are beef ribs, red wine, onion, celery, carrot, spices, flour, tomato and herbs. First off, marinate the meat with onion, garlic, ginger, salt and pepper and spices. Pour some wine on top of the meat and put the marinating beef in a cool place for an hour.

Once done marinating, place the beef in boiling water along with the sliced onions, carrots and potatoes. After a while, remove the bone, onions and any solid ingredients leaving behind only the stew. Next, fry the beef on top of a pan that has been covered with melted butter over a large flames.

Then, the beef is added into the boiled bone stew. Put the spices and onions along with the beef in a saucepan and slow-cook it for about an hour to tenderise the beef. Add some more spices and tomato in the stew. Next, add a tablespoon of flour mixed with cold water to make the stew thicker and tastier.

The final touch would be adding wine into the stew and continue heating it for 10 minutes. Now the warm dish is ready to be enjoyed with your loved ones.
