Unlike the traditional Roast Chicken, the Cantonese Roast Chicken is a genius combination of Asian flavours and Western cooking method. The preparation of the Cantonese Roast Chicken uses the Chinese Five Spices, Chinese rose wine, soy sauce, honey, ginger and Sichuan sauce.

The History of Roast Chicken

Roast Chicken is a dish that has existed since the medieval ages and is said to have first appeared in France. The roast chicken was rumoured to be a favourite of King Richard the Lionheart during the 12th century. When the Middle Easterners travelled to France, they introduced the concept of rotisserie, grilling chicken in a metal rod to ensure even cooking. Since then, the recipe of roast chicken has spread across the globe across various cultures. Thus, we have many different types of roast chicken with different cultures putting their own spin to it.  

The Cantonese Roast Chicken is said to have originated in Sichuan, China. A local restaurant owner in the region decided to combine the Western style of cooking chicken with their local flavours. The dish took inspiration from the Peking Duck – which explains the use of the Chinese Five Spice. Mostly, the dish is served as part of the Lunar New Year celebration but in the modern world; this dish is widely accepted as a fusion between two very different cultures.

Unlike the traditional roast chicken, the Cantonese Roast Chicken does not have any stuffing and is often served with rice and a ginger scallion sauce instead.

The Chinese Five Spices includes spices that are anti-inflammatory agents, provide us with antioxidants and preventing diseases such as stroke and heart attacks.

Five Spice also contains Star Anise that is rich in shikimic acid, which is said to improve the function of our immune system.
