Dish of the Day: Chakri Fried Rice (Khow Phad Chakri)

Originating from Thailand, Chakri Fried Rice is a rice dish that has been stir-fried in a frying pan or a wok. The dish is derived from the famous fragrant Thai fried rice, and the main ingredients of the dish include, rice, shrimp paste, green mango, sliced chillies and cucumbers. Furthermore, the dish is served with your preferred choice of meat, such as sliced chicken, crab meat, prawn or seafood.

The term ‘Khow Phat’ (pronounced COW-pat) simply refers to the stir-fried rice. Generally, Thai fried rice can be found all over Thailand as the dish is deeply embedded in Thai culture. Nearly all of the restaurants in the country will serve the dish, and it is a typical food sold at street food stalls.

There are variations to the dish such as with basil chicken, salted fish and mango. Each ingredient used in the recipe enhances the unique flavours that contrast with the strong shrimp paste. The best time to enjoy this dish is during lunchtime. 

What is Chakri Fried Rice?

Chakri Fried Rice is a delectable rice dish that features rice that has been stir-fried and mixed with shrimp paste. The dish is mainly paired with chicken or sweet pork, served with a wedge of lime. Spice up the meal by sprinkling some black pepper onto the rice.

The dish is made by preparing all of the ingredients, followed by cooking it in a wok or frying pan above medium-high heat. The time taken to cook the dish is about 20 minutes. Serve the meal with some “prik nam pla”, which is a Thai condiment made of chillies and fish sauce. The seasoning is made by combining the chillies and fish sauce, followed by giving it a good stir until it is properly mixed.   

History of Chakri Fried Rice

The Chinese people brought in their cooking techniques such as stir-frying and deep-frying. Knowledge spread and the methods brought in by the Chinese became popularised by the Thai people. Traditional food such as Thai Fried Rice is a result of the migration of Chinese people.
