Bite into a crispy breaded salmon with cheese-filled fried until golden brown.

What is Cheesy Salmon Menchi?

Cheesy Salmon Menchi is a Japanese deep-fried breaded salmon. Typically, Menchi is made from ground beef, pork or the mix of both. It is usually served as the side dish and often referred to as a salmon fry in Japan.  It can often be considered as an expensive delicacy for its richness in taste.

History of Cheesy Salmon Menchi

It is breaded in panko breadcrumbs and deep-fried in a pan adding a layer of crunchiness to it. Menchi can be traced back to over 100 years ago in a western-style Japanese restaurant in Tokyo. The word, Menchi, originates from the word, “mince”. It is a quintessential fusion dish adapted from western cuisine. It is usually coated with flour, egg and bread crumbs.  Menchi is interchangeable with minchi in the part of the west of Japan.

Instructions:

  1. Gather all your ingredients.
  2. Peel off the skin of the salmon. Cut it into two pieces for each salmon, making four pieces. Bloat it with a paper towel.
  3. Place the salmon on top of a cutting board. Put over a cling film over the top. Using a rolling pin, gently flatten the salmon to a flat surface. Careful not to hit the salmon too hard as it can break easily.
  4. Open up the cling film on top. Season it with some salt and put on cheese slices on top.
  5. Fold the salmon around the cheese.
  6. For the breading, mix in the egg, panko, salt, pepper and nutmeg in a large bowl. Knead the salmon well.
  7. Coat it with flour. Put it into the egg mixture and mix it with panko, bread crumbs.
  8. Heat up the oil. Fry the patties for 3-4 minutes for each side.
  9. Drain the oil with paper towels.
  10. Serve it with shredded cabbage and Tonkatsu sauce.

Notes: It is best to use fine panko in your breading. It will make it absorb less oil, making it scrips and stay crisp longer. You can do this by putting your panko into a food bag and crushing it with a roll pin. If you don’t like the overpowering fishy taste, you can add parsley to the breading mix. It can only make it tastier but leave it with a nicer aroma.
