Dish of the Day: Corn Pie

What is Corn Pie?

Corn pie is basically a side dish or snack that is composed of the crust, corn, butter, beaten egg, salt, pepper and creamy milk. The dish where you can taste both sweet and savoury flavours in one taste! 

History of Corn Pie

Different backgrounds, cultures and centuries but with the same love of corn. Corn or maize is a cereal-grain that was first cultivated by the Mexicans around 10 000 years ago. For its sweet taste, corn has been a favourite with the public and has since been farmed worldwide. With the popularity of corn, there was a rise in dishes in which corn is the star which includes corn pie.

We have the corn pie which resembles a casserole originating from Caribbean where it is served in a bowl where you can taste the corn and spice in one bowl. This Caribbean corn pie is famous for its ingredients in which they added onions, bell peppers and scotch bonnet pepper for an extra kick of spice.

Another version of corn pie came from Dutch, which is called the bottomless corn pie in which instead of a side dish, it has now become supper meal for them. The bottomless corn pie is usually drenched in milk and topped with hard-boiled eggs with butter to make it yummier.

The local corn pie we have is a pie that has a crunchy outer layer with the filling of melted butter mixed with corn, cream and bits of steamed potato. This is the mouth-watering dessert that you do not want to miss. The crunchy and crispy crust in our mouth is the perfect combo with the sweet and savoury taste of the corn and butter. This heavenly taste of corn pie makes it hard to stop eating after one bite.

How to Make Corn Pie

To make the local corn pie, the first thing we need to prepare is the corn soup. The corn soup is prepared by blending canned corn, steamed potato, one tablespoon of heavy cream and a glass of milk until it is perfectly mixed.

The next step is by pouring the blended corn soup onto a heated pot and mix it with canned whole corn kernels and condensed milk to make it suitable for the local palate. After mixing, boil the corn soup until it thickens.

For the crispy pie shell, it’s easier to get pre-made frozen pie crusts. Firstly, cut the frozen pie crusts into rectangular shapes and the size of your crust will be to your preference. After having it all prepared, put the corn soup on top of the pie crust and put more pie crust onto the fillings and carefully wrap the crust. The last step would be deep-frying the corn pie in the heated oil. It tastes much better when you eat it while it is still hot!
