What is a Fresco Chicken Nugget?
To understand what Fresco chicken nugget is, you must first understand what the word Fresco means. The term fresco was initially used to describe art. When an artist does a watercolour painting directly on the wet plaster of a wall or a ceiling in rapid motion, the masterpiece is described as a Fresco.
“Fresco” was used in gastronomy by the Italians to describe two things – outdoor dining, especially if a restaurant offers al fresco dining or to explain that the food has to be kept chilled.
The term fresco in gastronomy varies from place to place and in this case, it is merely an expression to describe a beautiful work of art – the chicken nugget of course.
The History of Chicken Nugget
The chicken nugget was invented by a guy that goes by the name of Robert C. Baker. Baker was a food science professor at Cornell University in New York.
Baker’s speciality was poultry, and in 1950, he and his team of students set on a project that was aimed at creating poultry-based food that looks different than the typical fresh chicken often served in a restaurant. His aim – to help the poultry farmers make more profit.
The team ended up creating 50 unique dishes that we now commonly consume as fast food like chicken meatballs and chicken sausages, but it was the chicken nugget that became Baker’s most important invention of all time.
Back in the 1950s, the meat industry was facing a problem figuring out how to bind minced meat together without breaking up during cooking. Baker solved the issue by coating the chicken in milk powder, vinegar, salt and grain before dipping the meat into a second coat of batter made of eggs and dough.
This might seem petty to us as it comes as cooking 101, but back in the days, no one had any idea on how to create something as simple as the batter. Baker and his team decided that their invention was free for anyone to copy.
This then catapulted the processed food industry even further, and by 1965, people were consuming about 34 pounds of chicken nuggets per year per person – that’s almost like eating a box of chicken nuggets every day or a year.
Today, chicken nuggets might look like just another finger food but back in the days, the creation of something that simple created a wave of change in the food industry. So whenever you take a bite, remember how it contributed to our society today.
