The word porridge was adopted when Portuguese traders came to India. The traders loved congee so much that it was instant favourite among the Portuguese. Upon returning home, they cooked congee and used the word “porridge” in most of their recipes. When the porridge became widespread to people all over the world, it quickly became a staple food in most countries.  

Porridge is easy to cook and digest which explains why it became the staple food for many countries. After a while, people started to innovate and added greens and meat that gave porridge more flavour. To date, we have many different versions of porridge that is enjoyed in different countries.

In United States, they enjoy eating grits where the porridge is flavoured with dried corn.

In the Philippines, they enjoy eating arroz caldo where rice grains are boiled in ginger and chicken broth until it becomes porridge.

In Europe, they enjoy eating kasha where the grain is boiled in water or milk to create the milky porridge they love. In Croatia, the locals enjoy eating zganchi.  The Croatian porridge is made of corn, honey and yogurt and wheat and is usually eaten over breakfast.

In Korea, they enjoy eating saewojuuk or Korean shrimp porridge where the porridge is boiled with shrimps and greens.
