 What is Mango Ebi Uramaki?

Uramaki is an inside-out roll with more than one or two fillings. It is different from makimono, a Japanese hand roll with seaweed. Uramaki has nori on the inside with rice on the outside. Its origin can be traced back to Little Tokyo in late 1960s. The restaurant was having difficulties getting fat belly tuna so they replaced it with avocado instead.

As its popularity increased, they kept it as a permanent option in the menu. It is a variation of California roll which hides the nori inside. Uramaki is not as common in Japan; as traditionally, it is eaten by hand and with uramaki that has an outer layer of rice, makes it very difficult to hold together between your fingers.

Ebi is tiger shrimp that is boiled, frozen, and later cut in perfect halves and served on its own or rolled up with rice. It is very different from nigiri, which we usually see in Japanese restaurants which are sliced fish on top of rice.

  1. Gather all the ingredients.
  2. To prepare the prawn, we first mix the flour and egg. Dip the prawns in the mixture and coat it with breadcrumbs. Heat the vegetable oil on a pan. Once it is hot, deep fry the prawn until it is golden brown. Drain the oil by placing it on paper towels.
  3. Take a bamboo and wrap it with plastic wrap. Scoop up some cooked rice and place on the sheet. Dip your fingers in vinegar and spread it around the rice to make it less sticky. Layer it with a thin application of spicy mayo.
  4. Turn it over carefully. Put in the shrimp tempura at the end of the sheet.
  5. From the bottom, start rolling the bamboo sheet over. Roll it tightly and firmly until it reaches the other side.
  6. Cut the rolls into pieces using a knife. Wet the knife with a towel before each cut. Remove the plastic wrap off the sushi and transfer it to a serving place. Garnish with mushy mango on top.

Carbohydrates
Depending on which type of rice you choose, whether it is white or brown rice, it can contain different nutritional values. Brown rice compared to white rice, has more fibre content.

Protein
Prawn has high amounts of protein and unsaturated fats. The protein content can range from 16 to 21 percent depending on what type of prawn you choose.

Fat
Deep-frying needed for this recipe, which makes it high in fat content. You should limit your intake of fried food with high saturated fats. In fact, when you deep-fry seafood, it can reduce vitamin D content by half.
