Dish of the Day: Roasted Pumpkin Soup

Typically, when we dine in a Western food restaurant, it is very common to order a bowl of soup to start. In Malaysia, there are so many types of soups that we always consume. Such as mushroom soup, seafood chowder, carrot soup, oxtail soup, pumpkin soup, and so on.

Roasted Pumpkin Soup, also known as roasted butternut squash soup, is something that is not very well-known here, but we may regard it as the typical pumpkin soup that we always have. Since the texture is similar, people often link both together with each other.

What Is Roasted Pumpkin Soup?

Roasted Pumpkin Soup is a type of soup made with thick pumpkin puree. Usually, the meat of the pumpkin is blended with the broth to make into a thick soup. People in Western countries commonly prepare this soup for special occasions, such as Thanksgiving and New Year’s Day.

Generally, people prepare this soup with coconut milk in it to further thicken the soup. However, sometimes it can be served just with its puree, depending on personal preference. Besides, to further enhance its texture, some variations of the soup will contain pumpkin chunks in it. This is when the meat of the pumpkin is not blended properly on purpose.

Furthermore, you can serve this dish hot or cold. Either way, it is still delicious and appetising, regardless. For the butternut squash type of soup, it is made with squash. The History And Origin

Pumpkins were brought to Europe from America in the 1500s. Cultivating the use of pumpkin and squash in various classic folklore and fairy tales such as Cinderella, etc.

Other than for meals, pumpkins were also used as decorations for festive purposes as well. Such that of Halloween, a tradition we still continue today.

Extraordinarily, this dish was the staple soup dish for prisoners during the Vietnam War. The early American colonists invented this dish as it has a sweet taste and crust in it and, eventually, during the wartime, the meal became what was used to serve to the prisoners.

To this day, Roasted Pumpkin Soup can still be commonly found everywhere including America, Australia, Europe, Russia and Malaysia. This meal has become so popular across the world that there are many cooking variations of the original recipe.

You can easily prepare this soup at home. All you need is a proper food processor or food blender to blend the pumpkin and broth.

Sometimes, you may even leave some chunks of pumpkin in it to give the soup dish some extra texture. To fancy it up, you can also add coconut milk or drizzle it on top as garnish.
