Dish of the Day: Spicy Baked Dory

If you love seafood and spicy food, you will love the spicy baked dory. Dory fish is probably one of the best whitefish there is, and it’s typically used to make fish ‘n’ chips. Likewise, when you bake dory with just the right level of spiciness, you won’t want to have dory fish in any other way.

When it is done right, the baked fish simply melts in your mouth. Even better, the spicy sauce brings bursts of flavours as it hits your tongue.

What is Spicy Baked Dory?

To make this dish, only fresh dory fillets are used to ensure the quality of the taste. The dory fillets are then marinated with spicy herbs like chilli flakes, peppercorn and paprika for a few hours to allow the herbs to penetrate into the fish.

When it is ready to serve, the dory fillets are then baked in the oven until it is just almost cooked. The baked fish is then served with a variety of side dishes including grilled or boiled seasonal vegetables, flavoured rice and even potato wedges. For those who prefer extra spice, they can always add more chilli flakes to the fillet upon serving.

The Types of Dory Fish used in Cooking

There are several types of Dory fish, but not all of them are used for food. While dory fillets might look somewhat understated as it reaches the table, the dory fish itself has unique features that make it stand out in the supermarket.

The most common types of dory fish used in cuisine are the John Dory fish, Mirror Dory and King Dory and they often found in the southern parts of Australia. The fish is also sometimes referred to as the St. Peter fish in Italy and France. The sweet flavours of Dory make it the fish of choice when cooking classic cuisines such as the fish ‘n’ chips and baked fish.

Another popular type of dory fish also commonly used is the Pacific Dory that is also called the Basa. However, they are actually just a type of catfish imported from Asian countries and do not share the same species as the John Dory Fish. This type of Dory is typically exported to the US, where it is hard to get any kinds of Dory fish locally.

Nutritional Content in Spicy Baked Dory Fish

Like most fish, Dory is a good source of Omega-3, which helps in the optimisation of heart function and prevention of cancer. Dory also helps reduce high blood pressure and helps improve intelligence in infants. As for adults, Dory fish can actually help prevent wrinkles.
