History of Spicy Jeyuk

Spicy jeyuk is a dish that originated from Korea. Spicy jeyuk is actually derived from a stir-fried beef dish but the beef is traditionally marinated in soy sauce. Pork meat is one of the most popular proteins in Eastern Asia and the Pacific as it is delicious and easy to get. 

Pork has been the staple food in several Asia countries, especially in China. The Chinese utilise pork in almost every dish in Chinese cuisine. Pork meat was made as the staple meat in China as it is easy to feed the pig and as it is a non-labour animal.

Pig has been a very important animal in China as it helps to reduce human waste by consuming them which helps the farmer to feed and take care of the pigs. In some rural areas, pork is shared for important occasions to strengthen bonds between the locals.

In Philippines, a whole roasted pig is the national dish for their country. Pork fat is appetising for the locals, and the taste of the meat is sweeter and cleaner than any meat. In Korea, pork is cooked in several forms like bacon, ham and sausage.

Pork meat or “dwaeji bulgogi” in Korean is enjoyed with the traditional Korean sauce; gochujang. The use of gochujang in marinating the stir-fried pork is said to exist since the 1400s. It was found in a Korean book collection of prescriptions of Native Korean Medicines.

Chilli peppers are actually from America. It was introduced to East Asia by the Portuguese traders in the 16th century.Gochujang was invented with a mixture of chilli powder, gluten rice, fermented soybean powder, barley malt powder and salt. This mixture produces the perfect taste of the traditional Korean chilli paste; gochujang.

Gochujang has been widely used in almost every food. The sweet and spicy taste of the gochujang leaves an after-taste. In order to cater for those who can’t consume spicy foods, gochujang was prepared with different levels of spiciness.

It can range from mildly hot to extremely hot. With that, fans of spicy food can’t get enough of the hot gochujang even though their tongues are numb and they sweat profusely.
