For some, there are those that enjoy dessert first before the main course and sometimes, just on its own as a snack during afternoon tea.

If you go to Thailand, you can find sweet desserts at street vendors and night markets. Thailand is famous for its street foods, especially desserts. Banana pancakes and mango sticky rice are some of their popular desserts that are loved by both the locals and tourists.

How to make it at home

In order to make sweet tapioca in coconut milk, you only need a few ingredients. Namely, tapioca, water, sugar, and coconut milk. Firstly, boil some diced tapioca in hot water with a little bit of salt. Cook it until it becomes soft. The next step is to caramelise the tapioca.

Add sugar and water to a pan. Boil the mixture while stirring. After the mixture has melted to form a sugar syrup, add the cooked tapioca and continue cooking. In a separate pot, pour in thick coconut milk with sugar and a pinch of salt. Boil it for a few minutes and keep stirring. You can also add pandan leaf for some additional flavour and to make it fragrant.

Prepare a plate for serving. Place a small amount of diced and caramelized tapioca onto the plate. Carefully pour the boiled coconut milk onto the tapioca. This sweet dessert requires minimal ingredients and a short cooking time. This simple dessert is easy to try at home and is able to impress your guests that come over!
