In areas where people don’t have a lot of ingredients to cook with, the Tofu with Minced Pork seemed like a good and easy way to keep the family well-fed.
The lightly-flavoured soup gets its fragrance from the fresh herbs used in the recipe, such as Thai Coriander (Phak Chee) and Thai Celery (Kuen Chai). Although it is typically cooked with a meat-based broth like beef broth or pork broth, some people use vegetable broth to keep the light taste throughout the dish. Some modern Thai restaurants also add seaweed to the dish to enhance the flavour and look.
