The Story Behind The Dish

Tofu with Minced Pork Soup (Gang Jeud) is probably the least known Thai dish when compared to Thai Green curry or Tom Yum. This is perhaps because we are so accustomed to the fact that Thai dishes are typically spicy and full of flavour. In addition to that, it is rare to see the use of Tofu in Thai cuisine.

There’s no clear story behind how the Tofu with Minced Pork Soup come about. But some say that the dish takes heavy inspiration from Chinese cuisine. In areas where people don’t have a lot of ingredients to cook with, the Tofu with Minced Pork seemed like a good and easy way to keep the family well-fed.

The lightly-flavoured soup gets its fragrance from the fresh herbs used in the recipe, such as Thai Coriander (Phak Chee) and Thai Celery (Kuen Chai). Although it is typically cooked with a meat-based broth like beef broth or pork broth, some people use vegetable broth to keep the light taste throughout the dish. Some modern Thai restaurants also add seaweed to the dish to enhance the flavour and look.

Not only is pork a good source of protein, but it also has a high content of vitamins and minerals such as Vitamin B6, vitamin B12, Zinc, Phosphorus and Iron. All of which is good for bone health and regulating blood pressure.

The other main ingredient, the Tofu, also has a high content of amino acid. Of which helps in the synthesis of hormones in our body. Tofu is also said to contribute to maintaining a healthy-looking and younger-looking skin. Women also find that eating Tofu helps with their menstrual cycle.
