Recipe: Bubble Milk Tea

Bubble milk tea, boba or pearl milk tea has become an overnight sensation and obsession to Malaysians. The divine combination of the creamy milk and the chewy pearls (or bubbles) makes the drink perfect for a tea break or as a dessert. There are various types of boba drinks, including those with milk and those without. Notably, the most popular boba drink is the original pearl milk tea and brown sugar bubble tea. Bubble tea originated from Taiwan in the 1980s. It usually consists of tea, syrup, milk and the chewy tapioca balls.

If you want to attempt to make your favourite bubble tea at home, we have some tips for you! Making bubble milk tea is quite simple. The most important part is the tapioca pearls. The bubbles are usually sold in a dry form and can be found in most supermarkets.

It only gets complicated when it’s time to cook the bubbles as it takes practice to get just the right texture. Tapioca balls that are too soft will sticky together and become big clumps. Bubbles that are undercooked are too hard and be difficult to chew. Thus, the preparation of the tapioca pearls is crucial in preparing a delicious bubble tea drink.

The types of tea commonly used are either black tea or jasmine tea. The tea used usually has an intense flavour. This is to ensure that the flavour of the tea comes through even after adding milk and ice. You can choose any type of milk according to your preference such as fresh milk, condensed milk or evaporated milk. For the syrup, you can use honey, white sugar, palm sugar, or brown sugar.

  1. Prepare the tea by steeping the tea bags with 4 cups of boiling water. Then, let the tea cool in room temperature.
  2. In the meantime, boil 4 cups of water and add the tapioca pearls. Cook them for 5 minutes and make sure to stir continuously to prevent them from clumping together. Once all the pearls have floated to the top, drain and rinse the pearls under cold water. Set them aside in a bowl.
  3. Next, add a cup of water to a pot. Wait until it starts boiling then add sugar. Stir until the sugar dissolves.
  4. Put the cooked tapioca pearls into 4 glasses then add few ice cubes. Pour a cup of tea, 2 tablespoons of condensed milk and 1 tablespoon of syrup into each cup. Stir well and enjoy the drink! You can adjust the amount of milk and syrup according to your preference.
