Recipe: Carrot Walnut Cake

  1. First, preheat the oven to 180⁰C. Meanwhile, spray two 9 – inch round cake pans with non-stick cooking spray. Set aside.
  2. Carrot cake: Start by whisking together all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt in a large mixing bowl. Gently mix until all the ingredients are well combined.
  3. In a separate mixing bowl, whisk the vegetable oil, eggs, brown sugar, granulated sugar, applesauce and vanilla extract. Then, add in the grated carrots and mix until all the ingredients are combined.
  4. Later, pour the wet ingredients into the dry ingredients and gently mix with a rubber spatula.
  5. Next, separate and pour the cake batter evenly into both cake pans. Spread the surface to even the batter.
  6. Later, bake the cake batter at 180⁰C for about 30 minutes. Test by inserting a toothpick into the centre of each cake, and if it comes out clean, the cake is ready to be taken out of the oven.
  7. Then, transfer to a wire rack and allow to cool for about 20 minutes.
  8. Cream cheese: Use an electric mixer and beat the cream cheese until it reaches a smooth consistency.
  9. Next, add in the melted butter and mix until it is well combined with the cream cheese. Then, add in the powdered sugar and vanilla extract and continue mixing until all the ingredients are fully combined.
  10. (Optional) level the top of each cake with a knife.
  11. Lastly, spread the frosting over the top and sides of the cakes. Decorate with more walnuts, if desired. Serve on a cake stand and enjoy!
