Recipe: Chicken Teppanyaki

Chicken Teppanyaki might look like a simple dish, but it is a dish that will just bring comfort to your soul. Typically, chicken teppanyaki is prepared in restaurants right in front of you, which adds to the excitement of enjoying the dish, but that doesn’t mean you can’t have it at home.

It is one of those dishes that is so easy to do that it’s perfect for a lazy night in binge-watching your favourite Netflix TV show. It’s a dish perfect for a night-in at home when you don’t want to cook or make too much effort to cook up dinner.

Ingredients (serves 1):

  1. Slice the chicken thigh into thin slices of about ½ centimetre in thickness.
  2. In a bowl, mix a tablespoon of mirin, soy sauce, sesame oil, grated ginger, sugar and mix until thoroughly combined. Add in the sliced chicken and let it marinate for at least an hour in the fridge.
  3. Meanwhile, cook about ½ a cup of rice.
  4. When you are ready to cook, heat cooking oil in a pan under medium heat and start adding the marinated chicken. Cook the chicken for about 4-5 minutes until it’s fully cooked.
  5. Add in yellow onion slices, carrots, cabbages and bean sprouts and continue to cook for another 2 – 3 minutes until the vegetables are slightly wilted. You can add the bean sprouts last if you prefer it to be somewhat crunchy.
  6. Add any leftover sauce from the marinade. Balance the sauce by adding more mirin, sesame oil and soy sauce to your preferred taste.
  7. Remove the pan from the heat.
  8. To serve, place a bowl of rice on a plate and pour the cooked chicken teppanyaki around the rice. Sprinkle with sesame seed and fried garlic pieces. Serve with a side of pickled radish and clear soup. Enjoy your dish while watching your favourite TV show!

Pro-tip: Marinade your chicken longer in the fridge for a more intense taste. You can also save some chicken for the next day by simply storing it in the refrigerator.
