Recipe: Chinese Mushroom Chicken Noodles

The Chinese mushroom chicken noodle is a dish filled with nutrients. The main ingredients of the meal are packed with different benefits.

Firstly, the chicken is full of protein which supports the immune system. Noodles, on the other hand, are rich with carbohydrates. Not only are they healthy, but noodles also help fill your stomach up real fast.

Mushrooms have high antioxidants which are great to build immunity. Furthermore, it contains selenium which supports the liver’s function and also fights inflammation.

This Chinese dish is effortless and quick to prepare. It also tastes fantastic on a rainy day served hot.

INGREDIENTS (4-5 servings) :

(Shredded Chicken)

(Braised Mushrooms)

(Sauce)

  1. One tablespoon of sticky sweet soy sauce
  2. One tablespoon of mushroom braising sauce
  3. Three tablespoons of chicken stock or any soup broth
  4. One teaspoon of light soy sauce
  5. One tablespoon of sambal or tomato sauce according to preferred taste
  6. One teaspoon of crispy lard pieces
  7. One teaspoon of lard oil

Preparations:

  1. Take a small pot, add the chicken breast and water. Let it simmer for 10-20 minutes. Set the chicken on a plate. When the chicken is cold enough, thin them to shreds using your hand. Then, keep the shredded chicken aside.
  2. Dip in the mushrooms in a bowl of hot water for 20 minutes until it softens. Trim and remove the stalks. Squeeze out the excess water from the mushroom’s cap. Use a pair of scissors and cut the mushrooms thinly.
  3. Add the sliced mushrooms with the rest of the ingredients in a pot. Let it simmer for 20 minutes until the mushrooms are soft. Transfer the stewed mushrooms with the braising sauce into a small bowl and set it aside.
  4. Reserve the mushroom stewing sauce.
  5. In each bowl of serving, add the sauce. Stir it using a spoon until it mixes well.
  6. Cook noodles using a slotted ladle until cooked for about 30-45 seconds.
  7. Rinse the noodles for a few seconds.
  8. Add the noodles to each serving bowl and mix it well with the sauce.
  9. Cook a bit of choy sum with a slotted ladle for 20 seconds. Drain the water and top them on the noodles, some shredded chicken and some braised mushrooms. Serve it with pickled green chilli at the side.
  10. The dish is best served hot.
