With Chinese New Year approaching, it’s finally time to unpack and chow down some of those delicious cookies! Here, at Foodpanda, we can’t get enough of kong th’ng (peanut crumble), tau sar piah (mung bean biscuit), kai chai peang (chicken biscuit) and our main protagonist today, the Hup Toh Soh (Chinese Walnut Biscuit).
‘Hup Toh’ refers to walnut in Cantonese. This nostalgic, bite-sized treat is known for its aromatic walnut fragrance that comes with each bite. Families usually have a jar of these addictive treats and offer them to relatives and friends when they come to visit.
Traditional Hup Toh Soh comes in large pieces of 4-inch diameter. However, the cookies have now shrunk to bite-sized pieces as it easily fits into jars or containers. While we typically purchase our cookies, why not kick-off the lunar new year by making your very own Hup Toh Soh!
Hup Toh Soh (Chinese Walnut Cookie) Recipe:
Ingredients:
- 150g of walnuts, toasted and coarsely chopped
- 175g of unsalted butter softened at room temperature (leave sit out for 30 minutes)
- 90g of brown sugar/granulated sugar *add on more sugar if you have a sweet tooth*
- 3 large egg yolks
- 280g of plain flour
- 50g of sesame seeds, toasted (added for more fragrance, omit if necessary)
- 3/4 teaspoon of salt
- 1 teaspoon of double-acting baking powder
- 1 teaspoon of baking soda
- 1 egg (whished for eggwash)
Cooking Steps:
- Toast the walnuts and sesame seeds until fragrant.
- Line a baking tray with baking paper and set aside for later use.
- Preheat the oven to 165℃.
- Whisk plain flour, baking soda, baking powder and salt in a large bowl.
- Place the toasted walnuts into a plastic bag and crush them with a rolling pin.
- Then, add the crushed walnuts and sesame seeds into the large bowl.
- With an electric mixer, mix the unsalted butter and sugar until light and fluffy. Then, add in the egg yolks and mix well.
- Gradually add the flour and walnut mixture until it forms a smooth dough.
- Take a spoonful of dough and roll it into a ball. Line them in a baking tray. Lightly press on each ball of cookies with a fork to create a small indentation.
- Brush each cookie with egg wash.
- Bake the cookies in the preheated oven for about 25 minutes, or until they turn golden brown.
- Allow the cookies to cool completely before storing in an airtight container. Enjoy!
