Recipe: Elote

If you’re a fan of corn, then you will love this Mexican dish called Elote. Commonly sold on the streets of Mexico, this dish will make the perfect finger food for your birthday parties and family gathering. It’s easy to prepare, but it will be a crowd-pleaser, to say the least.

Ingredients (serves 6):

Preparation Method:

  1. Preheat your grills and grill the corn evenly for about 10 minutes until lightly charred. Make sure to be consistent when turning the corns to ensure even roasting.
  2. Brush each corn with mayonnaise and unsalted butter and sprinkle cayenne powder, chilli powder, cojita cheese and cilantro. The mayonnaise will serve as a creamy sauce to your corn cob. Serve the lime on the side. You can help the corn individually or line them up in a medium-sized serving platter. Best served fresh from the grill.

Pro Tips:

If you’re making Elote as finger food for a gathering, cut the corn cob into 2 or 4 to make it easier to serve. You can also make it a fun do-it-yourself dish for your kids birthday party by allowing the children to sprinkle on their corn cob. Be aware that you might want to swap the chilli and cayenne powder for something less dangerous like garlic powder or cheese powder instead.

Want to jazz up your elote? Give your guests the option of adding various toppings like crumbled bacon, Sriracha sauce, and chocolate shavings. It might not be as traditional, but it will allow your guests to have fun while trying this exciting Mexican street food.

Swap the mayonnaise with unsalted butter or olive oil spread. You can also swap the Cojita Cheese with Parmesan Cheese or Ricotta Cheese for an added saltiness.

If you’re not a fan of tasty dishes, skip the cayenne powder and use something a little subtle like paprika powder instead.

On the other hand, if you love spice and want that extra kick, add some Habanero sauce or Tabasco sauce to your corn cob.
