Recipe: Fetal Duck Egg

The Vietnamese community is exceptionally adventurous when it comes to trying out new dishes and recipes. If you have been to Vietnam before, fertilised duck eggs will sound familiar to you.

Fertilised duck egg, also called as Hot Vit Lon Luoc in Vietnam is partly incubated duck embryos in the eggshell. It is often eaten as it is in that raw manner, and it is considered as local delicacies in the country. This snack is often found in roadside stalls or markets in Vietnam. There is no specific method on how to cook or make it. However, there are ways on how to prepare and consume this unique cuisine.

Where To Get Fetal Duck Egg?

You can find uncooked or raw fertilised duck embryos in Vietnamese market or grocery store. It is usually sold at 16 to 20 days of age. If you got an older one, there is a higher chance of eating its bones and feathers and beak.

For freshness of the egg, it is best to get this in the local market.

How To Prepare It?

  1. Just like usual chicken eggs, you may choose either cook it hard-boiled style or soft-boiled. Vietnamese people generally will prepare their eggs to be soft-boiled. Therefore it depends on your preference.
  2. Similar to our usual eggs, you have to boil it in the simmering water for 20 to 30 minutes. Once it is done, chill the egg aside for a minute or until it is warm enough to be held in your palms.
  3. When the eggs are cooled off, take it out of the water and tap the end with a spoon, remove the top part of the shell, you will be able to see a small hole in the middle.
  4. Then, you break the membrane and suck out the liquid of the embryo. Just like eating jelly, after no more dripping juice is left, you use a small spoon to scoop out the solid flesh inside and across the shell wall.
  5. Add a bit of salt and pepper to taste. If you want to cover up some of the taste, you may add fish sauce as well to prevent the fishy smell.
  6. Mix the seasoning with the content inside the eggshell and enjoy right away!
