Recipe for Christmas Cookies

Now, tell me who doesn’t like cookies on Christmas? The cookies are the best part of Christmas, whether you’re making it for yourself, loved ones or Santa. This is the season of giving and gifting. Spreading joy to children and adults alike by baking cookies is one of the best ways to celebrate Christmas. 

The smell of freshly baked cookies in December spreads joy in the household and makes everything cosier during the holidays. Here are a few cookies that are commonly baked during Christmas.

1. Gingerbread cookies

Whenever Christmas comes to mind, gingerbread cookies are definite must-have in your household. It is so synonymous with the celebration that gingerbread cookies often appear in Christmas movies and are sold exclusively nearing Christmas.

This famous gingerbread men cookies are not only cute, but it is also can last quite a while and sturdy. This is a perfect choice if you want to make it a gift or to deliver it to family members that are far from you. These cookies won’t go stale so quickly, so they’re perfectly fine to ship for a few days.

Glaze

Instructions:

  1. Preheat oven to 177°C.
  2. Gently whisk the flour, salt, and baking powder in a bowl evenly.
  3. Mix vegetable shortening and sugar using a mixer until they turn light and fluffy about 3 minutes on high speed.
  4. Slowly add the egg, milk and vanilla extract, then blend in the flour mixture evenly.
  5. When the dough is formed, rolled out on pastry board to ½ inch thick.
  6. Gently, cut the cookies with cookies cutter and place in a baking sheet. Remove the excess dough on the shape. Don’t place the cookies too close since it will rise when baking.
  7. Put the dough in preheated oven for 6-8 minutes or until the cookies start to brown and cool it off on the baking sheet.
  8. Lastly, transfer the chilled cookies on a cooling rack while making the glaze.

Glaze

  1. Mix the cream cheese and butter until the mixture is light and fluffy, or for 3 minutes.
  2. Slowly pour maple extract and salt into the mixture and keep folding from front and back until the mixture is smooth.
  3. Dip the cookies in the mixture and let it cool on a cooling rack.
  4. You can decorate your cookies with any sprinkles or based on your creativity.

2. Double chocolate peppermint cookies

Peppermints are really refreshing in any form. The combination of chocolate and peppermint has been a classic combo and adopted by chocolate bars and drinks. Thus, a double chocolate cookie with peppermint is a no-brainer! Not to mention, the cookies are dipped in white chocolate, making it better and sweeter.   1. Preheat oven to 180°C.
  2. Mix butter and brown sugar until it is light and airy.
  3. Carefully add egg and peppermint extract into the mixture.
  4. Sift the flour, baking soda, cocoa powder and salt altogether in a separate bowl.
  5. Add to the earlier mixture and stir until it is evenly combined.
  6. Gently fold in the white chocolate chips into the mixture. Do not over-mix it.
  7. Scoop the dough onto cookie sheets and make space between each dough.
  8. Put in the oven for 12 minutes or until they turn brown. Remove the cookies from the oven and cool them down on a cooling rack.
  9. Combine 200 g of the chopped white chocolate with coconut oil and melt it using the double boil technique.
  10. Your chocolate sauce is ready to be dipped with delicious cookies.

3. Eggnog cookies

Eggnog is usually a beverage consumed during the Christmas holiday. But now, you can even make special eggnog cookies! There are all sorts of eggnog food products such as eggnog drinks, bread, desserts, of course, cookies. These cake-like cookies are tender, fluffy and soft with the perfect balance of ingredients.

I bet you will fall in love with this cookie once it melts in your mouth. It is a chewy snickerdoodle biscuit with the flavour of eggnog.

  1. Sift flour, baking soda, baking powder, nutmeg and cream of tartar in a bowl.
  2. Combine butter and sugar in a different bowl and mix until fluffy.
  3. Carefully add eggs, eggnog and vanilla or rum extract. Keep mixing evenly.
  4. Mix the mixture with the sifted ingredients until well-combined.
  5. Cover the bowl and let it chill for at least an hour.
  6. While waiting, mix sugar and nutmeg in a bowl.
  7. Form balls from the dough and coated it with the sugar and nutmeg mixture.
  8. Put the dough on a greased baking sheet and bake for 9 minutes.
  9. Chill the cookies on cooling racks before ready to serve.
