Recipe: Kebab

Kebab refers to a wide variety of grilled meat dishes, which originated from Middle Eastern cuisine. Many variants of Kebab are popular in Asia and across the globe. Kebab usually consists of marinated cut up or ground meat, accompanied with fruits or vegetables and often cooked on a skewer. The skewer then grilled over a fire.

Some types of Kebab do not use a skewer. Instead, they are baked in an oven or boiled like a stew. Depending on place and cultures, there are various accompaniments and condiments according to each recipe. You can use mutton, lamb, beef, chicken, fish and seafood for a kebab.

Kebab is a famous street food in Malaysia. You can eat Kebab with bread, rice or as it is. Kebab served in pita bread with various vegetables, is called Doner Kebab. The meat, either chicken, beef, lamb or turkey, is rolled into a steamed or heated pita bread.

Alongside the meat, you can have diced tomatoes, cucumbers, cabbage, lettuce, pickles, onions, and chilli sauce as garnishes. Other than Doner Kebab, there are also Shish Kebab which is skewered grilled meat, and Adana Kebab which is minced meat kebab.

Ingredients (3 servings):

Directions:

  1. Heat a pan and melt the butter. Stir fry the red onion until golden brown.
  2. Add chicken breast and cook for about 3 minutes. Then add in cucumber, carrot, curry powder, salt, and black pepper. Mix them well and cook for another 3 minutes.
  3. Meanwhile, heat the pita bread using a non-stick pan. Then, slice it into two.
  4. Put the mayonnaise in the inner part of the bread and fill it up with the cooked meat.
  5. Lastly, drizzle it with chilli sauce and enjoy it while hot.

Note: You can replace the meat with beef, lamb, mutton or seafood, depending on your preferences. You can also use other vegetables such as finely shredded lettuce, cabbage and tomato.
