Recipe: Kuih Kapit (Love Letters)

Kuih Kapit is my mum’s favourite Chinese New Year snack every year. Every time before Chinese New Year, my mum would order a few tins of Kuih Kapit (Love Letters) from our neighbour. Therefore, I get to eat this peckish snack every year during this festive season. This year-round, my mum has decided not to purchase it but to try it on her own following this Kuah Kapit recipe!

Kuih Kapit (Love Letters) is one of the most common snacks in this wonderful festive occasion. The process of making this snack is extremely time-consuming, therefore it is always prepared together in a household. This way, it does not only provide tons of snacks during Chinese New Year but also gives out a festive cheer and happiness in the family.

Ingredients 

For this kuih kapit recipe, you will need some equipment and ingredients as below:

Instructions:

  1. First, sift the rice flour and plain flour into a mixing bowl. Sifting process is important as we do not want clumps of flour.
  2. Slowly add in the granulated sugar. Mix the mixture.
  3. Add in the coconut milk while mixing it. Stir this mixture until smooth.
  4. Slowly add in the egg yolks and eggs, mix thoroughly.
  5. Once the mixture is smooth, strain the batter.
  6. Take out your love letter moulds, start to lightly grease them to avoid batter from sticking on them.
  7. Heat the moulds over the charcoal fire.
  8. Once heated, open up the mould and pour a ladle of the love letter batter into the mould.
  9. Close the mould tightly and bake them over the fire for roughly a minute on each side.
  10. When the batter turns into golden brown, remove from heat.
  11. Take out the love letter from the mould and fold them immediately while hot.
  12. Press them tightly with a tin cover.
  13. Place them aside and let them cool completely.
  14. Once cooled, store them in an airtight container or in a tin.
  15. Serve accordingly.

Other than using the traditional Kuih Kapit (Love Letters) moulds, you may get an egg roll toaster and toast the batter inside.

The procedure is the same, except for using the moulds, you bake this in the toaster. Once done, fold the Kuih Kapit (Love Letters) and set aside to cool.  Using egg roll toaster is easier for beginners as it can control the temperature better. This method is just like how you make waffle in your waffle maker!
