    1. Place all stock ingredients into a pan and pour in some water.
    2. Heat it until it boils, then allow it to simmer over very low heat until the meat is tender enough to fall off the bones (approximately 2 hours).
    3. Strain the contents of the pan, reserving the soup and meat but discarding all the vegetables.
    4. Shred the meat and refrigerate overnight.
    5. The following day, remove the layer of fat on top of the stock and discard.

    2. Once the soup is boiled, while stirring occasionally, allow it to simmer until the soup mix is tender (approximately 1 hour).
    3. Season well to taste, and add the lamb shanks into the soup mix. Make sure the meat is heated thoroughly.
    4. Serve with crusty buttered bread or a steaming bowl of rice. Enjoy!
