Grilled Melted Mushroom and Cheese Sandwich

* Note: Opt for a healthier choice by baking the mushrooms and onions. Alternatively, if you are on for a flavourful sandwich, the above ingredients can be sautéed in a buttered skillet to bring out more aroma.
  1. Preheat the oven to 210°C.
  2. Toss the sliced mushrooms and onions in olive oil on a baking sheet. Season with a few pinches of salt and pepper to taste. Then, bake the vegetables in the oven for about 20 minutes or until roasted.
  3. Melt 4 tablespoons of butter in a skillet over medium heat.
  4. As the butter melts, assemble your sandwich. Layer shredded gouda cheese on one slice of bread, then the roasted mushrooms and onions, and then even more gouda. Layering the vegetables in between cheese will ensure the melted cheese will hold the sandwich together. Top with another slice of bread and press lightly together.
  5. Place one sandwich down on one side for a second in melted butter. Gently flip it to the other side. Repeat with another sandwich and cook the sandwiches for about 2 minutes. When one side is lightly browned, gently flip to another side and cook for another 2 minutes. Timing is based on own preference or until cheese is melted.
