Recipe: Raclette

If you love cheese, then you will love this Swedish dish. Raclette, a cheesy dish originating from Sweden is all about melted cheese. Traditionally, the Raclette is prepared in front of the customers by melting a large semi-hard, high-quality cheese directly on the platter. Like the Fondue, you can enjoy the melted cheese with bread, different cuts of meat like Salami or Ham slices, pickles, and of course, a good bottle of wine.

The secret to a good Raclette lies in the quality of the cheese itself and the side dishes served with it. It may look like something you could only enjoy at a fine-dining restaurant, but you can also enjoy Raclette at home.

Ingredients and Equipment (2 servings):

Raclette Preparation:

  1. Prepare your meat and vegetables on small plates surrounding your Raclette Grill and make sure you prepare and empty serving plate for you and your guest.
  2. When you are ready for dinner, turn the Raclette Grill on and set to medium heat.
  3. Place the potatoes, bacon, capsicum slices and sausages on the grill
  4. While the vegetables and the meat are cooking on the grill, place a slice of Raclette cheese on the Coupelles and place it under the grill. If you are not familiar with a Raclette Grill, it is a grilling instrument that has a bit of height, enabling you to melt your cheese on your Coupelles underneath the grill. Hence, you don’t have to worry about any excess oil falling off the grill.
  5. Once the meat and potato are ready, place them on the serving plate prepared earlier. Take your melted Raclette Cheese and pour it over your cooked potato and meat. The portion of cheese to vegetable and meat is entirely up to you.
  6. Pair your first bite with a sip of good French wine and continue to grill and pour your melted Raclette cheese over good conversation.

Tips: If you are an avid cheese lover, keep an extra gram of Raclette in the house as you can still pair it with biscuits after dinner.
