Recipe: Red Ruby With Coconut Milk

Although it is called chestnuts, water chestnuts are not nuts at all. They are aquatic tuber that grows in paddy fields, marshes, ponds and lakes. Water chestnuts are a great source of fibre that aid digestion. During the hot day, the Thai consume this dessert to cool themselves from the warm weather. It is also known as “Red Rubies” because of its appearance similar to Rubies.

  1. Prepare the water chestnuts. Rub them at least four times to clear away the soil. Soak them in red colouring with Pandan leaves and add sugar for some minutes until the chestnuts change its colour into red.
  2. Set aside a plastic bag for coating the chestnuts with tapioca flour. Then, toss it in the plastic bag combined with tapioca flour for the layer. It is a better step to coat it in a sealed container because it requires twisting to make sure all water chestnuts are well-mixed.
  3. No moulding and cutting needed in this recipe. If the result appears a thicker layer of jelly, drizzle them with a little water. The second coating is a suggested step to produce a better shape of red ruby.
  4. Put the red ruby in a big bowl. Pour the coconut milk into the same container until they are no longer floated in the liquid surface. Ready-made is necessary, although the original taste will not be entirely equal. Some restaurants mix them with iced water to get a fresh dessert and flavorful. Enjoy it immediately.
