Recipe: Soft Shell Crab Salad With Mango (Poo Nimyam Ma Moung)

Raw mangoes is used to give this Thai raw mango salad freshness and tartness. In Thailand, other than mango, this salad could also be made with pomelo, grapes or pink grapefruit. As long as the fruit is sour with a hint of juiciness, you’re good to go!

Preparation Method:

  1. First, pre-heat a small frying pan over a medium heat, then add sesame seeds.
  2. Keep them on the pan until they’re golden and begin to splutter. Then remove the pan from the heat and allow it to cool.
  3. Blend chillies, garlic, ginger and sprigs of coriander and mint in a blender until finely chopped, then add the fish sauce, lime juice and sugar and whiz again.
  4. Next, put crab meat into a bowl and pour over three-quarters of dressing. Then add the lime zest and most of the chopped coriander and some mint and toss so it’s well coated.
  5. Put the rocket leaves into a large serving bowl, toss them in the remaining dressing and pile the crab meat on top, along with slices of mango here and there.
  6. Sprinkle over the lemon grass, lime leaves, remaining coriander and mint, chives and sesame seeds.
