Recipe: Spicy sandwich – Banh Mi Cay

  1. Lightly toast the baguette.
  2. To prepare the chicken, mix the fish sauce, lime juice, salt, jalapeno and garlic in a baking dish. Add the chicken breast to the mix and refrigerate for at least an hour.
  3. Meanwhile, start preparing the pickled vegetables by combining hot water and sugar and stir until the sugar dissolves. Then, add in salt, rice vinegar, sliced carrots and radishes. Refrigerate for about 30 minutes.
  4. Grill the chicken breast on medium heat on each side. Then, slice the chicken into thin pieces.
  5. Drain the pickled vegetables.
  6. Spread the mayo over the baguette and lay the chicken, cucumbers, pickled vegetables, cilantro and jalapenos. Enjoy!
