Recipe: Vietnamese Pork Sausage -Doi

Making your own sausage can be daunting. It can be confusing when there is a variety of sausage casings available in the market. However, do not let it deter you from making the homemade sausage.

With homemade sausage, you can taste the amazing sausages that are fresh and no added preservatives. You can make it in a large quantity and freeze the remaining in the fridge. It can last long, and you can easily serve it any time you want.

Vietnam is famous for its various street snack food. Vietnamese pork sausage is one of the popular snack foods. Let’s make the tasty sausages with this recipe.

Ingredients (about 20 pieces):

  1. Cut the pork shoulder into small pieces then place them in a food processor. Process the meat into the ground and set aside.
  2. Heat the olive oil in a frying pan. Stir fry the garlic, shallot, and lemongrass until fragrant or brownish. Set it aside.
  3. In a mixing bowl, place the ground pork, roast peanuts, Thai basil, black peppercorn, chilli peppers, salt, sugar, and ground black pepper. Mix them well.
  4. Then, add the fried ingredients from step 2 and mix it again. Make sure you mix the ingredients thoroughly.
  5. Cover the mixing bowl with plastic wrap and let it sit for about 2 hours.
  6. Now you need to prepare the sausage casing. Place the casings in a bowl and rinse them with water gently. Soak the casings in cool water for 30 minutes. Then flush the water inside of casings one by one to get rid of any salt. Make sure you do this gently, so they don’t get tangled.
  7. Next, use a sausage attachment or regular funnel to insert the meats into the casings. Once it filled up until near the tip, tie the ends. Repeat this until you used up all the meat.
  8. Boil some water in the pot. The water should be enough to submerge the sausage. Place the sausages into the boiling water and boil them for about 5-10 minutes. Make sure you poke small some holes using a toothpick to prevent the sausages from bursting.
  9. Once boiled, let the sausages cool at the room temperature.
  10. Then, fry the sausages and enjoy it by itself or serve with rice. You can keep the remaining sausages in the freezer, and it can last for about a month.
