This recipe for Yong Chow Fried Rice, or Yang Chow Fried Rice is a popular Chinese-style wok fried rice dish in many Chinese restaurants throughout the world. The recipe of this fried rice is of oriental origin and dates back to the mid 1700s.
People in Jiangshu province insist that an authentic traditional Yong Chow Style Fried Rice should include eggs, carrots, green peas, shrimp, Chinese ham and green onion. These ingredients bring different tastes, textures and colours to the dish, which makes it a prime meal for young children around the world.
Ingredients (4 servings):
- 3 tbsps oil
- 2 large eggs (beaten)
- 110g fresh shrimp (deveined and shells removed)
- 1 medium onion (diced)
- 110g Virginia ham (cut into cubes)
- 110g Chinese Roast Pork
- 3/4 cup frozen peas (thawed)
- 1 1/2 tsp salt
- ¼ tsp sugar
- 1 tsp Shao Xing wine (optional)
- 2 scallions (chopped)
- 2 cups romaine (finely chopped)
- 1/8 tsp freshly ground white pepper
Preparation Method:
- Heat wok over medium high heat, and add 1 tbsp of oil, followed by the beaten eggs. Fold and scramble them gently, taking care not to scorch the eggs. Set egg aside.
- In a pot of boiling water, blanch the shrimp and drain. Set aside.
- Place wok over high heat. Add 2 tablespoons of oil and the diced onion. Stir-fry until the onions are translucent. Next, add the diced ham and pork, and stir-fry for 30 seconds.
- Add the rice and stir-fry for 2 minutes. Use your wok spatula to flatten out and break up any remaining rice clumps.
- Add the shrimp and peas, and stir fry continuously for around 2 minutes until the rice is heated through.
- Sprinkle salt and sugar over rice. (If using), drizzle the Shaoxing around the perimeter of the wok to get a good sizzle and to cook off some of the alcohol in the wine. Mix everything to ensure the seasonings are uniformly incorporated.
- If the rice looks a little dry, sprinkle some water or chicken stock, or if you want to be a bit more authentic, just a touch more oil.
- Mix in scrambled eggs, scallions, chopped lettuce, and white pepper. Stir fry to combine, until the lettuce is just wilted, and serve!
