Recipe: Yuzu Cha

About the size of a tangerine, yuzu is mainly cultivated in Japan, Korea, and China. It’s incredibly fragrant, but also super sour and tart, which means it’s not meant to be eaten as is.

Instead, its zest and juice are used for its unique flavour in the kitchen. In this recipe, we’ll be teaching you how to make Yuzu Cha, a Korean favourite, especially during the winter.

In this recipe, we’ll be using yuzu marmalade. If you’d like to buy a jar, then go ahead. We’re sure you’ll get your hands on some top quality marmalade. But for those of you who’d like to make your own marmalade at home, we’ve included a recipe down below.

Yuzu Marmalade 

INGREDIENTS:

  1. Quarter the yuzu fruits and separate the peel from the skin.
  2. In a pot over high heat, boil the flesh of the yuzu for 10 minutes.
  3. Thinly slice the peel of the fruit and boil in a separate pot for 10 minutes.
  4. Drain both flesh and peel and weigh—half the weight and measure out the sugar.
  5. Next, add drained fruits and sugar to a pot over medium heat.
  6. Stir continuously until the sugar melts. This should take 5 minutes. Be careful not let the sugar brown! Immediately remove from heat.

Now you have your very own homemade yuzu marmalade! Now, let’s make some tea.

Yuzu Tea

INGREDIENTS:

DIRECTIONS:

  1. Dissolve 2-3 teaspoonful of yuzu marmalade into a cup of water. Serve.
  2. If you’d like this drink served cold, mix with cold water and garnish with some slightly bruised mint leaves.
