Recipe: Claypot Loh Shu Fun

Loh Shu Fun, ‘rat’s tail’, is a type of Chinese noodles that is long and tapered at the end. It’s made from rice flour and cornflour, hence its smooth and shiny texture and white and translucent appearance. The noodles may be stir-fried or cooked in soup. Claypot Loh Shu Fun is one way of preparing this noodle.

Unlike other claypot dishes, like the Claypot Chicken Rice, people usually stir-fry the noodles and ingredients in a pan first. Then, the cooked noodles are transferred to the heated clay pot. The clay pot helps retain the heat, so the noodles remain soft.

Claypot Loh Shu Fun usually has a raw egg cracked on top of it, with chopped spring onion and fried salted fish garnished on top. If you feel squeamish of eating raw egg, you can replace it with a poached egg or half-boiled egg. The pickled green chillies usually accompanying this dish is there for a spicy kick.

  1. Mix the meat with salt, light soy sauce, ground white pepper, and Chinese cooking wine. Cover and marinate it for about 30 minutes.
  2. Put the noodle in the boiling water for 2-3 minutes to remove the oil on it. Then, drain the noodle and set it aside.
  3. Heat the oil in the frying pan. Stir fry the minced garlic and shallots until fragrant. Then, add in the marinated meat and shiitake mushrooms. Continue to fry for about 10 minutes or until fragrant.
  4. Add in water, light soy sauce, oyster sauce, sesame oil and dark soy sauce. Mix them well and add salt. Next, add in the noodle and beansprouts.
  5. Mix them well and adjust the seasonings to taste. Stir fry the noodle for about 2 minutes.
  6. Heat the clay pot on the stove until hot. Transfer the fried noodles into the clay pot.
  7. Garnish the noodles with a raw egg, fried salted fish, and chopped spring onion. Enjoy!
