Recipe: Dakgogi Kimchi Jeon

If you’re not a fan of the maple-syrup soaked, sweet pancakes, we’ve got a pancake recipe to fulfil your savoury hunting taste buds. Korean pancakes are typically savoury are served as side dishes in a meal, and are also popular as snacks. Dakgogi means chicken while jeon means anything that is coated in flour and egg then pan-fried in oil. Why not add kimchi to the mix, right? Therefore, here is a great recipe on Dakgogi Kimchi Jeon!

  1. Make Chogochujang sauce by mixing gochujang, vinegar, sugar and sesame seeds.
  2. Make Chokanjang sauce by mixing soy sauce, vinegar, sugar, kimchi juice and water. Set aside.
  3. Cut green onions and kimchi into 2cm pieces.
  4. Season chicken by adding soy sauce, mirin, maesil syrup or sugar, chopped garlic and sesame oil.
  5. In a small bowl, whisk the egg. In another bowl, make the batter by mixing flour, rice flour, sweet rice flour and chicken stock.
  6. Heat a cast-iron pan on med-high heat. Pour about 2 tablespoons of oil into the pan. Layer green onions and kimchi as wide as about 12 inches in the pan.
  7. Pour 2-3 tablespoons of batter over green onions then, dot the pancake with ground chicken and top with 1/3 of whisked egg
  8. Turn the pancake over to cook the other side for 2 minutes or until brown.
  9. Serve it with both Chogochujang or Choganjang sauces or drizzle the sweet and sour gochujang sauce on top.
