Recipe Fried batter-Bot Chien

Introducing another classic dish on the streets of Vietnam – Bot Chien. Bot Chien is the Vietnamese version of fried rice flour cakes where instead of using daikon radish, the rice flour cakes are made from rice flour and tapioca flour. The dish is then topped with pickles to enhance the overall flavour while adding a crunchy texture. The recipe for fried batter-Bot Chien below allows you to make this delicious dish from the comfort of your own home.

The recipe is actually pretty straightforward, with ingredients you can easily find at your local supermarkets or grocers. A tip would be to make the rice flour cakes overnight and cool it in the refrigerator.

Ingredients (2 servings):

  1. Rice flour cake: Place all the rice flour ingredients in a microwavable bowl and whisk until all the ingredients are dissolved and combined. Leave the mixture to rest for about 30 minutes.
  2. Stir the mixture again before putting it in the microwave for 2 minutes.
  3. Take out the mixture, stir and place it back into the microwave for another 1 minute.
  4. Repeat step 3.
  5. Transfer the paste to a greased square mould. Spread and flatten the surface with a spoon or spatula and steam the paste for about 30 – 40 minutes. Insert a toothpick in the middle of the paste. It is ready if the toothpick comes out clean.
  6. Leave it to cool in the refrigerator overnight.
  7. Remove the cake from the mould and cut into rectangular shapes. Divide into 2 portions.
  8. Transfer the rice flour cake to a bowl and coat each piece with dark soy sauce. Set aside.
  9. Pickles: In a small bowl, combine all the pickles ingredients and mix well. Set aside for at least 15 minutes.
  10. Dipping sauce: Add all the dipping sauce ingredients in a bowl and mix well. Set aside.
  11. Heat some vegetable oil in a pan over medium-high heat. Add in the rice flour cakes and stir-fry for about 6 minutes until each side is golden brown and crispy.
  12. Crack 2 eggs into the pan. Break the yolks and stir-fry the eggs with the rice flour cakes for about 2 minutes. Flip over and top with chopped spring onions. Cook for another minute until both sides are cooked.
  13. Transfer to a serving plate and top with the pickles. Enjoy!
