Recipe: Herbal Jelly

The Herbal Jelly – Gui Ling Gao, is translated as tortoise jelly in Chinese. It is a jelly-like medicine which is also sold as a dessert. Traditionally, it was made from the powdered plastron from the Golden Coin turtle, with a variety of herbal products.

Today, commercially available herbal jelly that is sold as dessert does not contain turtle shell powder, but still share the same herbal additives as the medicine, and is known for helping to improve skin complexion, reduce body heat and get rid of toxins.

The taste of herbal jelly is slightly bitter, which is referred to as “kum” by the Cantonese. Normally, people would consume it with sugar, or honey as the healthier choice. Now, you can make your own herbal jelly at home by following the recipe we prepared!

Preparation Method:

  1. Boil the water with the cane sugar till sugar has dissolved.
  2. Meanwhile, mix the 50 gm of Gui Ling Gao powder with the 250 ml water.
  3. Once the syrup is boiling, lower heat and mix in the powder mixture, keep stirring for about 10 mins. The mixture will start to thicken.
  4. Sieve the mixture and pour into serving bowls. Discard any lumps.
  5. Once cooled, keep chilled in the refrigerator before serving.
