Recipe: Kalguksu

Kalguksu, also known as Korean knife-cut noodle soup, is a light and easy dish that will satisfy you on a cold night. As the name suggests, the noodles used for this dish is knife-cut, resulting in its rough thin-flat shape and bouncy texture.

There are multiple variations of this classic Korean noodle dish. Haemul Kalguksu (해물칼국수, Kalguksu with seafood) and Dak Kalguksu (닭 칼국수, Kalguksu with chicken) are among a few. Today, we’ll be teaching you how to make Bajirak Kalguksu (바지락 칼국수, Kalguksu with littleneck clams). The steps for this Kalguksu recipe are few and simple enough to follow when you’re home alone and hungry!

  1. In a pot, add the soy sauce, minced garlic and salt into the anchovy and kelp stock to season. Next, boil the anchovy and kelp stock over medium heat.
  2. Once the stock starts to boil, toss in the zucchini and shiitake mushrooms and cook for two minutes, or until they have softened slightly.
  3. Add in the clams and prawns and leave the stock to boil for roughly two minutes until they’re cooked. Make sure not to overcook the clams, as the flesh might become gummy.
  4. Meanwhile, boil the kalguksu noodles in a separate pot. Rinse and drain the noodles with cold running water and set it aside.
  5. Now, transfer the kalguksu noodles into the pot cooking the anchovy and kelp stock. Leave it to boil for around one minute, so that the noodles are able to soak up the broth’s flavours.
  6. Serve in a bowl and top it off with green onion on top to garnish. Serve hot, enjoy!
