Recipe Korean Seaweed Soup

This recipe for Korean Seaweed Soup, also known as miyeok guk or miyuk guk (미역국), is a soup made from brown seaweed (also known as sea mustard or Japanese wakame). Besides (obviously) having seaweed in its recipe, this soup is usually accompanied by some form of protein, such as beef, chicken, seafood, etc.

In Korea, this dish is also referred to as ‘Birthday Soup’ as it’s a tradition for people to have Korean seaweed soup on their birthdays. But, even if it’s not your birthday, you can still enjoy the simplicity of this soup anyways! Just follow the simple steps below, and you’ll be warming yourself up in no time.

  1. Soak the dried seaweed in water to let it expand. Leave it for around five to ten minutes. Rinse the seaweed in running water before draining and squeezing the water from the seaweed. Note that if you’re using pre-cut seaweed, use a pair of scissors to cut it into thin strips before soaking in water. Set the seaweed aside.
  2. Combine the meat with the salt and pepper in a separate bowl. Coat the meat in the seasoning thoroughly and set it aside.
  3. Pre-heat your pot over medium heat for about 20 seconds. Pour in the sesame oil and add the seaweed and beef. Stir-fry for around two minutes, or until the beef is partially cooked through.
  4. Add the soy sauce garlic and water, and mix well.
  5. Heat the soup over medium to medium-high heat for 10 to 15 minutes, or until the beef has fully cooked. Add salt to taste if needed.
  6. Serve warm with a bowl of steamed rice and other Korean dishes. Enjoy!
