Recipe: Porotos Granados (Fresh Bean Stew)

Porotos Granados is a hearty, fulfilling bean stew. Perfect for those who are looking to stay in on a cold, and rainy night!

There are many variations of the dish.

Originally from Chile, this stew is traditionally made up of dried Cranberry beans, butternut squash, red Kurri, corn kernels, green beans and Chilean herbs, like Paprika and Oregano. However, in modern times, many other types of beans can be used as a substitute for cranberry beans. Such as Tortola beans and Bayo beans. You may also switch out the vegetable base for chicken or beef broth if you want a meatier option.

But today, we’ll be showing you how to make traditional Porotos Granados, with its thick, and creamy vegetable sauce base. This Porotos Granados recipe is incredibly delicious and easy to make!

  1. Heat 1 tablespoon of vegetable oil over medium-high heat. Add in the paprika and stir for 1 minute. Toss in the onions and cook for another 5-8 minutes.
  2. If using fresh beans, go to step two. If using canned beans, skip to step six.

Fresh beans

  1. Add in the squash, corn, the broth, the beans, and the tomatoes onto the pan. Stir for a while before adding the salt, pepper, cumin if desired and a small bunch of basil.
  2. Cover the pan with a lid and leave it to cook until the beans are cooked (approximately 20 minutes).
  3. Remove the basil, adjust the seasoning, and serve. Enjoy!

Canned beans

  1. Add the squash, corn, tomatoes and broth (but not the beans) onto the pan. Stir for a while before adding the salt, pepper, cumin if desired and a small bunch of basil.
  2. Cover the pan with a lid and leave it to cook for 15 minutes.
  3. Drain and wash the canned beans and toss them into the stew and stir.
  4. Once hot, remove the basil and serve. Enjoy!
