  1. Salad cream: Hard-boil the eggs. Separate the yolks from the whites.
  2. In a food processor, combine the egg yolk, olive oil, Dijon mustard, heavy cream, vinegar, garlic, salt and water.
  3. Blend until the mixture is smooth. Add in the tarragon and blend a few more times.
  4. Sandwich: Season the vegetables by placing the tomatoes, cucumber and onion slices in a large mixing bowl. Squeeze the lemon over the vegetables and drizzle with some olive oil. Sprinkle over with salt and black pepper. Toss the vegetables to make sure all the pieces are seasoned.
  5. Spread each slice of bread with butter. Arrange the seasoned vegetables on one slice of the bread. Top with the hard-boiled eggs and salad cream. Cover with the other slice of bread and serve. Enjoy!
