Recipe Sarawak Kolo Mee

If you’ve been to Sarawak, you will know how Kolo Mee reigns best as one of the all-time favourite dishes among the Sarawakian Chinese. “Kolo” basically means “dry-mixed” in Chinese, where it is characteristically light and tossed in a transparent sauce. In this Sarawak Mee Kolo recipe, it a no doubt a simple, but appetising meal that can be enjoyed any time of the day!
Although variations on the noodles have been made across Asia to cater to different taste buds, the original version of kolo mee from Sarawak still stands as the top favourite.

Ingredients(2 Servings):

Preparation Method:

  1. Marinate pork loin with salt, char siu seasoning, five-spice powder, 1 tbsp dark soy sauce and 1 tsp sugar. Set aside to marinate overnight.
  2. Marinate minced pork with 1 tbsp dark soy sauce, 1 tsp sugar and white pepper. Set aside to marinate for 1 hour.
  3. Finely slice shallots and chop garlic. Deep-fry in peanut oil until golden brown. Set aside the fried shallots and garlic and reserve the oil for later.
  4. Fry marinated minced pork in some of the shallot oil. Place the marinated pork loin on a hot grill for 20 min, turning occasionally. Brush the marinade onto the meat with each turn. Slice the loin when you are ready to serve.
  5. Boil the noodles for approximately 3 mins and drain, reserving the cooking water. Quickly blanch the noodles for 5 sec in a bowl of ice-cold water and then in the reserved cooking water for 5 sec. Repeat this cycle three times.
  6. Blanch the choi sum.
  7. Assemble the noodles, sliced loin and minced meat in a bowl. Top the noodles with the fried shallots and garlic and drizzle on some shallot oil before serving.
  8. Garnish with spring onion and sambal sauce for some heat.
