Vendors would push a cart carrying a boiling pot of bone broth, and stockpot containing noodles, vegetables and garnishes, and roam through the streets or park at roadsides. The vendors would use two pieces of bamboo block and tap them, making a “bok bok” sound to let people know that they are nearby.

Preparation Method

  1. In a large pot, fry beef strips in oil until browned.
  2. Remove the beef strips, leaving the oil and juice in the pot.
  3. Fry the garlic until golden.
  4. Quickly add ground beef, celery, and scallions. Stir until the beef is just brown.
  5. Add beef stock, black pepper, cinnamon, and fish sauce.
  6. Bring to a boil, then add noodles.
  7. Remove from heat and put into individual bowls.
  8. Top with beef strips and cilantro.
  9. As condiment, soak the red pepper flakes in the vinegar and add to individual bowls.
