Recipe: Thai Steamed Fish with Lemon and Chilli Sauce

Preparing a Thai dish can be difficult and complicated, but this just isn’t the case for Thai Steamed Fish with Lemon and Chilli Sauce! This dish is the definition of minimalist Thai cooking. With only basic ingredients, a complex sauce can be made to give the fish its sweet, sour and spicy taste. The fish is normally cooked on a plate, by steaming, to catch the juices.

Ingredients(3-4 servings):

Preparation Method:

  1. Using a knife, cut a few diagonal slashes across the fish, about 1 1/2 inches apart on both sides.
  2. Insert lemongrass into the cavity of the fish. Place a banana leaf on top of a heatproof plate, then place the fish on top of the banana leaf.
  3. Add water into the steamer and wait for it to boil. Place fish into steamer once the water is boiled, cover the lid and steam for 15 minutes.
  4. Meanwhile, in a bowl, mix chopped garlic, chilli peppers, cilantro, chicken broth, fish sauce, lime juice and sugar. Taste to adjust seasoning – the taste should be a balance of spicy, salty and sour. Set aside.
  5. While the fish is around 10 minutes into cooking, pour the seasoning sauce onto the fish and wait for it to cook thoroughly.
  6. Once the fish is cook, remove it from the steamer and you’re done!
