Recipe Minestrone Soup

  1. In a large pot, cook the onions over medium heat until translucent. Then, add in the garlic and stir until fragrant.
  2. Add in the carrot and celery and cook for about 5 minutes, or until the pieces begin to soften. Then, stir in the green beans and season with dried basil, oregano, ½ tsp of salt and black pepper, to taste. Gently stir the ingredients and cook for another 3 minutes.
  3. Add in the can of diced tomatoes and chicken broth to the pot and bring to a boil.
  4. Reduce to medium-low and let it simmer for another 10 minutes.
  5. Then, add in the pasta and cook until the pasta and vegetables are tender. Season with more salt and pepper, if necessary.
  6. Ladle the soup into serving bowls and top with grated parmesan cheese and fresh basil (optional). Enjoy!
