Recipe: Pan Seared Duck Magret

I think you’ll love this exquisite and elegant recipe we will be presenting today – Pan Seared Duck Magret. Magret refers to the breast of a Moulard duck reared for foie gras. In this recipe, the magret is pan-seared and done within a few minutes in the oven. You can then serve this dish with some roasted potatoes or vegetables, accompanied with a creamy sauce made from the marinade.

This dish makes for an impressive and classy meal. You can even surprise your significant other by making this impressive dish on a date-night!

Ingredients (2 servings):

  1. Using the sharp knife, diagonally score the layer of fat about ½ inch across on the top of the magret de canard. Then, score in the other direction, making hash mark patterns on the fat.
  2. Salt the meat on both sides. Then, smear the meat with honey and stick the thyme sprigs in between the hash marks of the meat.
  3. Place the meat in a zip-lock bag and pour in the orange juice. Place the zip-lock bag in a Tupperware large enough for the meat to lay flat, and let it marinate for at least 8 hours or overnight.
  4. Preheat the oven to 200⁰C.
  5. Remove the magret from the marinade and discard the thyme sprigs.
  6. Pat the magret completely dry with a paper towel and transfer to an iron skillet.
  7. Turn the heat to medium-low and let the fat render for about 5 minutes. Then, turn the heat to medium and let the magret cook for another 3 minutes, or until the hash marks on the fat have achieved a diamond-patterned crisp brown.
  8. Drain the duck fat and flip the meat over. Place the entire skillet in the oven for about 5 minutes for medium-rare.
  9. Remove the magret from the oven to a cutting board and allow it to rest for about 8 minutes.
  10. Meanwhile, pour the leftover marinade in a small saucepan and let it simmer for about 5 minutes, or until its volume has reduced to half. Serve as a sauce. Enjoy!
