Recipe: Stir-fried Flat Noodles

Stir-fried flat noodles, also known as Pad See Ew, is a popular Thai street dish made with flat rice noodles in soy sauce, oyster sauce, fish sauce and sugar. It is traditionally made with Sen Yai, wide and thin rice noodles that are not easy to find in local markets. However, you can substitute it with any other type of flat rice noodles without ruining the dish!

Chinese broccoli, also known as Gai Lan, is a key ingredient in stir-fried flat noodles. It is leafy and looks different to broccoli but the texture of the stems is similar. Chicken is also normally used when cooking this dish, but you’re free to substitute chicken with any protein of your choice.

Ingredients(4 Servings):

Preparation Method:

  1. Soak the noodles for 30 minutes and steep them in hot water for five minutes, then drain.
  2. Cut chicken into thin strips and toss with soy sauce.
  3. Add 2 tablespoons of canola oil to the wok on medium-high heat.
  4. Sear the chicken on both sides for 2-3 minutes.
  5. While the chicken is cooking, add soy sauce, dark soy sauce, fish sauce and oyster sauce to a bowl and whisk them together.
  6. Add in the egg to the wok and chop it up while cooking.
  7. Add in garlic, broccoli and mushrooms.
  8. Turn to high heat before adding in the noodles and chicken.
  9. Cook the noodles until slightly crispy, which normally takes 2-3 minutes.
  10. Add in the sauce, toss well and cook until noodles caramelize a little.
