Recipe: Tsukemen

Tsukemen, or better known as Japanese Dipping Noodle, is a classic Japanese dish usually eaten on a hot day. There are two kinds of Tsukemen noodles, classic Tsukemen (where you dip cold noodles into a hot broth), and Hiyashi Tsukemen (where you dip cold noodles into a cold broth instead)!

Today, we’ll be teaching you how to make a classic bowl of Tsukemen (not Hiyashi today). So, the next time you need something cooling but fulfilling to eat, use our Tsukemen recipe below!

  1. Prep all the ingredients. Cut the sliced pork belly into one-inch pieces, mince the ginger and garlic, remove the bottom of the shimeji and shiitake mushrooms, and slice the shiitake mushrooms into smaller pieces. Next, finely chop the scallions and deshell and devein the shrimps.
  2. Pour the sesame oil into a saucepan, and heat over medium-high heat. Once the oil has heated up, toss in the minced ginger and garlic. Cook until fragrant.
  3. Pour in the (spicy) doubanjiang and constantly stir-fry, so it doesn’t burn.
  4. Toss in the meat. Stir-fry until the pork is thoroughly cooked.
  5. Add in the shiitake and shimeji mushrooms and cook until wilted.
  6. Pour in the Menstuyu and water and bring the mixture to a boil.
  7. Lower the heat to medium-low. Add the miso and soy sauce and allow it to simmer for five minutes.
  8. Add in the chopped green onions and white vinegar.
  9. Turn off the heat and set everything aside.
  10. Meanwhile, bring a large pot of water to boil. Cook the ramen noodles as per its package instructions. Drain and rinse the noodles before soaking them in a bowl of ice water to cool.
  11. Pour the hot soup into a bowl, and the ramen onto a separate plate. Enjoy!
